Weekend Power Oats

I really enjoy doing recipe/health posts on here as it is something I am super passionate about and love to share. :)

One of my favorite meals especially at breakfast or brunch time is oatmeal/hot cereal/porridge, whatever name floats your boat. But we all know what that yummy hot bowl with tons of toppings is especially great at this time of year now that the temperature is dropping!
I regularly make my oatmeal with steel cut oats (which is the best to cook with if you are not in a time crunch.) Quick oats and rolled oats are highly processed which is never good. Steel cut oats are closest to the original form of the oat as possible. :)
With this recipe I also added another one of my favorite forms of protein, quinoa! There is so much you can add to this to suit your taste buds.

Let's get on with the recipe!

First you are going to need your oatmeal base which will be steel cut oats, quinoa, whatever milk you like, and water.
First place about 4 cups of water in a medium to large pan, and wait to boil.

While waiting for the water to boil, measure out a cup of oats along with half a cup of rinsed quinoa. (Rinsing the quinoa takes away the bitter taste which is usually on the outside of the quinoa germ and grain before cooking.)

Now when your water is at a rapid boil add your oats and quinoa to the water. Give a little stir and let that boil in together. Once this has now reached it's own boil, turn the heat down to a simmer and let be and cook for about half an hour. While cooking I like to stir every so often so it doesn't stick, and add splashes of almond milk. It all depends on the consistency you like your oatmeal. I like mine very soupy!

Once the oatmeal is done, stir again and add a little splash of vanilla extract or whatever flavors you fancy! Hazelnut or almond would be delicious as well.

Serve your oatmeal bowls, and add whichever toppings you would like. To mine, I added golden raisins (which I cannot get enough of recently!), strawberries, cinnamon, 1 tbsp of flax seed or chia would be great too, and a few teaspoons of coconut sugar. This stuff is incredible! My new favorite healthy alternative to sugar. Coconut sugar tastes very similar to brown sugar and has a similar effect when it dissolves. I can easily see this as the next stevia!

Enjoy with a cup of tea, or your favorite comforting drink and you are ready for a great day or weekend. :)

Everyone enjoy and happy Saturday!

Olivia
